Spinach and Mushroom Quinoa

Friends! Romans! Countrymen! Lend me your bellies...ha. Hi, guys. It's been a while since I've been here, and I'm very sorry about that! It's not that I haven't been cooking; but like usual, it's about finding the time to get recipes to you guys!

Creamy Spinach and Mushroom Lasagna

Okay, quick poll: Who loves lasagna?? *Raises hand* Great. Now that we've gotten THAT out of the way, we can move on to today's recipe! Lasagna is one of the ultimate comfort foods, don't you agree? Ooey, gooey, cheesy, and indulgent. Mmm.
This recipe offers a delicious, meatless twist on lasagna that's so tasty and FILLED with good (and good for you!) ingredients like spinach, mushrooms, tons of cheese, and an absolutely wonderful homemade creamy mushroom sauce!

Roasted Tomato, Tortellini, and Spinach Soup

Let me just go ahead and break the ice: IT'S SNOWING! (<--See what I did there? *Snicker*) Oh, good grief. This has been a crazy week for weather here in north Texas. Rain turned to ice on Sunday evening, effectively shutting down the city for all of Monday and most of Tuesday. Wednesday and Thursday were cold, but not freezing--and then today, Friday, I went to work and the university sent us home at 10:30 this morning due to snow and rapidly worsening driving conditions!
I've had plenty of quality time to myself this week, which is always delightful--and I've also had some great kitchen time! I made the Turkey Chili Taco Soup again, which is a wonderful, hearty soup for cold weather--and today, I'm trying my hand at something new!

Baked Eggs with Tomatoes, Feta Cheese, Spinach, and Mushrooms (and Avocado Toast!)

It's cold here in Dallas these days, and has been for some time. It's so cold, in fact, that my car has trouble starting more days than not; at least lately. Hopefully that doesn't mean it's time for a new one (ain't nobody got time for that!) Anyway, this baked egg breakfast seemed like the perfect way to warm up on a cozy Saturday morning. I'm sure you'll agree!

Bacon, Cheddar, Spinach, and Mushroom "Grilled" Flatbread Sandwich

YOU. GUYS. This sandwich. Oh. Dear. God.
It began as many things in my kitchen do--with a semi-specific craving: I wanted a mushroom grilled cheese sandwich. It's gray and chilly outside, and I wanted to bring some warmth inside! This sandwich did exactly that--and filled the house with delicious aromas to boot!

Breakfast Flatbread with Fried Eggs and Greens

So...tomorrow is December 1, 2014. WHAT?! Time never fails to surprise me in its swift passing. Just like that, another year elapses...and we're on the brink of entering a new one, which will undoubtedly pass just as quickly. Man. I'm too old for this.
Thankfully, a runny fried egg is the perfect fix for existential crises in the morning. Especially a runny fried egg atop a crunchy, crisp flatbread crust with leafy spinach, savory garlic, some extra virgin olive oil, and tons of cheese.

Spinach-Artichoke Angel Hair Pasta with Tomato Cream Sauce

So...this week, I learned that I've been typecast--in my own life. Apparently, I play the uni-dimensional role of "princess" or "diva" much better than I knew! What's the reason for this revelation? Well, this weekend, I went for an overnight camping and kayaking trip with a good friend, and everyone who learned about our trip responded in one of two ways: either, "Oh my gosh, you're really expanding your horizons this year! I'm so proud of you!" or "Really? YOU are going camping? I mean, don't take this the wrong way...but you just don't seem very...outdoorsy."

Crustless Asparagus, Mushroom, & Tomato Quiche

I've said it before, and I'll say it again: I LOVE QUICHE. It's so easy. It's so tasty. Oh, and it can be *so healthy*--especially when you pack it full of good-for-you vegetables. I also love lazy Saturday mornings when I don't have to do anything other than exactly what I want (which is usually experiment in the kitchen!)
Quiche is one of those "choose your own adventure" kind of meals--because anything can go into it! This quiche is hearty, rustic, and has some Mediterranean flavors in it, thanks to a bit of tangy feta cheese, red onion, asparagus, and tomatoes.

Pan-Fried Salmon with a Balsamic Blueberry Reduction

Hi, I'm Esther--the most neglectful food blogger of 2014 :( *Hangs head in shame* So here's the deal: each semester, the gym changes its group exercise classes, so what worked perfectly last semester is completely different this semester, and I've had to make some accommodations to maintain my exercise routine.

Turkey, Spinach, and Bacon Meatballs

Okay, guys. These meatballs are...well, first--HI. How are you? I hope things are well. I can't believe that Thanksgiving is so close! Where did the year go? Do you have anything fabulous planned? I hope some quality time with your family and loved ones is "on the menu."
Alright--back to the meatballs: I think this is the first time I've ever made meatballs from scratch. Seriously. I've made hamburgers and meatloaves, but meatballs--this was a first, and I have no idea why I waited so long! These were so easy and stinkin' delicious

Spinach & Pomegranate Stuffed Pork Chops with Smashed Red Potatoes

Hello, friends! How's everything? I hope you're well and having a wonderful week. It's nice to be writing again so soon :) You know, I love this time of the year--and I love all of the fun the seasonal produce available--it means new ingredients for me to experiment with; namely, pomegranate! I had never worked with one before today, so it was fun learning how to cut and de-seed it. (<--Is that a word?)

Spinach and Cranberry Loaded Sweet Potatoes

Well, tomorrow marks two weeks since my diagnosis, and overall, I feel fantastic! I've had to make some some major adjustments, mostly in the way of taking medication so often and checking my blood sugar consistently throughout the day, but I'm really feeling good.

Strawberry Limeade Salad

Man, today was a hot day in North Texas. Even though, officially, the temperature was under 100 degrees, it clearly didn't matter, because the air was so suffocatingly thick, it felt like heat waves were radiating from the pavement. I'm surprised my shoes didn't melt!
On days like today, there's just no point in firing up the stove. I couldn't bring myself to do it (as I was too busy chugging a gallon of water to replenish everything the heat stole from my body!) So the dinner answer was simple: something refreshing.

Spinach, Tomato, Bacon, & Cheddar Crustless Quiche

I love making meals that I can enjoy for breakfast, lunch, or dinner. Quiche is one such meal, especially because it requires very little effort on my part--I grab some tasty filling options, beat a few eggs, throw it all in the oven, and I'm eating in under an hour! My favorite part of quiche is the freedom to add as many ingredients as I want.

BLT Spaghetti Carbonara

I am dog/house-sitting for a friend this week, who gave me full access to use everything in her kitchen (including a brand new, unopened package of bacon!!), so this is a guest kitchen post! :)
It's a stormy kind of night, which I think is PERFECT weather for a big, indulgent bowl of pasta, a glass of wine, and a movie! I found this recipe at Tide & Thyme, and it's delicious. Speaking of storms--prayers for the people affected by the crazy tornado in Oklahoma today. How awful. Tonight, I'm thankful for my safety and that of my friends and family.

Ham, Spinach, and Egg Cups

Sometimes, a meal that was supposed to be breakfast turns into an "Oops! It's brunch!" when I sleep in later than planned! Does that ever happen to you? In times like these, eggs are a perfect go-to for a filling, tasty, versatile dish. Add a few extras, and you've got a delicious, easy meal for any time of the day.
