Smashed Avocado Toast with Sauteed Bell Pepper, Asparagus, Mushrooms, and Fried Eggs

Guys! These ice days have been absolutely brilliant because they've allowed me to get back into the kitchen, cook, and photograph food in actual daylight!! Goodness. I didn't realize how much I've missed being in the kitchen, buzzing around chopping and prepping and tasting! Expect at least one more post (maybe even later today) before the weekend is over. I'm so excited that I've been able to blog!

Baked Eggs with Tomatoes, Feta Cheese, Spinach, and Mushrooms (and Avocado Toast!)

It's cold here in Dallas these days, and has been for some time. It's so cold, in fact, that my car has trouble starting more days than not; at least lately. Hopefully that doesn't mean it's time for a new one (ain't nobody got time for that!) Anyway, this baked egg breakfast seemed like the perfect way to warm up on a cozy Saturday morning. I'm sure you'll agree!

Breakfast Flatbread with Fried Eggs and Greens

So...tomorrow is December 1, 2014. WHAT?! Time never fails to surprise me in its swift passing. Just like that, another year elapses...and we're on the brink of entering a new one, which will undoubtedly pass just as quickly. Man. I'm too old for this.
Thankfully, a runny fried egg is the perfect fix for existential crises in the morning. Especially a runny fried egg atop a crunchy, crisp flatbread crust with leafy spinach, savory garlic, some extra virgin olive oil, and tons of cheese.

Sweet Potato Breakfast Hash with Poached Eggs

As I've mentioned before, my favorite cooking show is Chopped. I eagerly anticipate the baskets of mystery ingredients, and groan alongside the chefs as they try to create something delicious, beautiful, and creative before time runs out! :) I don't move very quickly in the kitchen, so I know that the clock would be my ultimate nemesis in the Chopped Kitchen, without a doubt.
One of the dishes I see quite frequently on Chopped is hash, a dish made with cubed potatoes, meat (sometimes), and cooked with additional veggies and spices. Sweet potato hash, purple potato hash, new potato hash, corned beef hash...HASH FOR EVERYBODY! I decided to give it a go in my own kitchen--a Foodie & Fabulous first!

Crustless Asparagus, Mushroom, & Tomato Quiche

I've said it before, and I'll say it again: I LOVE QUICHE. It's so easy. It's so tasty. Oh, and it can be *so healthy*--especially when you pack it full of good-for-you vegetables. I also love lazy Saturday mornings when I don't have to do anything other than exactly what I want (which is usually experiment in the kitchen!)
Quiche is one of those "choose your own adventure" kind of meals--because anything can go into it! This quiche is hearty, rustic, and has some Mediterranean flavors in it, thanks to a bit of tangy feta cheese, red onion, asparagus, and tomatoes.

Parmesan Asparagus with Fried Eggs

You know what I love? Simple, elegant, beautiful food. I'm talking about straightforward flavors, simple presentation, and delicious tastes that don't have to be fussy or fancy. Of course, there's definitely room for very extravagant, "I slaved over the stove for hours!" kind of dishes--but on some days, like today, less is more.
It's a quiet, rainy day here in Dallas, and I found myself searching to create a meal to match the peace and tranquility of my mood. I bought some beautiful asparagus recently, and decided to give it a go, following Justin at Salt Pepper Skillet. I've never worked with asparagus before--this was my first time--and I was thrilled at how easy it is to make!

Baked Eggs in Baked Potato Shells

Christmas is coming! Hooray! :) I'm thrilled. I hope you guys are well and enjoying this December! 
And...school is out for the semester!! WHEEEEE!! Oh my gosh, guys--the past couple of weeks at work have been rough, mostly because the students who procrastinated all semester were rushing in to get things done last minute--and also because the students who performed poorly in their classes received notification about their academic standing.

Sausage Breakfast Strata

It's "Icepocalypse 2013" here in North Texas--or "Icemaggedon", as others are calling it. On Thursday, the 5th, an "Arctic Cold Front" blew into our region, causing cold, windy, damp weather to become icy rain and snow, which has frozen several inches thick and has completely covered every surface of the DFW area, rendering everyone housebound and mostly useless. There have, sadly, been multiple fatalities and some unthinkable traffic troubles (there were some people stuck on the highway for more than twelve hours one night!)
During this unexpected mini vacation, I'm here in the apartment by myself, and I'm loving every minute of it! I really enjoy my time alone, though (fully embracing my status as an introvert), so I don't really experience cabin fever or stir-craziness, (I've been fortunate); however, my Facebook news feed bears witness to the distaste people have for being restrained to the indoors for longer than several hours at a time.

Honey Ham, Mushroom, and Pepper Jack Omelet

It's been a lazy Saturday here at casa de Esther. Thank God, because it's been such a hectic week--it's nice to have some time to do a little bit of nothing :) I think eggs are the perfect breakfast food for lazy people, as they come pre-wrapped in their own little package (perfect for portion control) and they can stand on their own or blend in with everything else.
This morning, omelets were the order of the day, both because I don't have lots of groceries at the new place yet and also because the few things I do have lend themselves beautifully to omelets! The beauty of this dish is that anything goes. You can stuff nearly anything into an omelet and it will be delicious! It's a great way to get a healthy serving of veggies and protein at the same time.

Spinach, Tomato, Bacon, & Cheddar Crustless Quiche

I love making meals that I can enjoy for breakfast, lunch, or dinner. Quiche is one such meal, especially because it requires very little effort on my part--I grab some tasty filling options, beat a few eggs, throw it all in the oven, and I'm eating in under an hour! My favorite part of quiche is the freedom to add as many ingredients as I want.

Baked Eggs in Avocado

Avocado. What a beautiful, versatile, wonderful fruit! It makes for a very happy chef indeed : ) I love them in guacamole, on sandwiches, and on their own with a little salt and pepper, but, I was curious about the baked eggs in avocados recipe I've seen floating around Pinterest and other places, so today, I decided to give it a try.

Breakfast Quesadilla

I think it's pretty fair to say that quesadillas rank quite high among the ultimate comfort foods. I mean, come on. A flour tortilla filled to the brim with gooey melted cheese and other assorted flavorful goodies? Oh, yes. A thousand times, YES!
Upon finding a brand new package of tortillas in the kitchen, my response was a squeal of excitement, immediately followed by a breakfast quesadilla. I stuffed it full of cheese, fluffy scrambled eggs, crispy bacon, corn salsa, and topped it with pico de gallo and sour cream.
