Breakfast Quesadilla

I think it's pretty fair to say that quesadillas rank quite high among the ultimate comfort foods. I mean, come on. A flour tortilla filled to the brim with gooey melted cheese and other assorted flavorful goodies? Oh, yes. A thousand times, YES!
Upon finding a brand new package of tortillas in the kitchen, my response was a squeal of excitement, immediately followed by a breakfast quesadilla. I stuffed it full of cheese, fluffy scrambled eggs, crispy bacon, corn salsa, and topped it with pico de gallo and sour cream.
I only used ingredients that I already had in the house, which makes this recipe unbelievably easy to adapt and customize. I hope to have avocado next time...oh, YUM. This is another non-recipe recipe--just use whatever you have on hand!

Ingredients:
  • Eggs, scrambled
  • Flour tortillas
  • Bacon, sausage, or breakfast meat of your choice, cooked
  • Shredded cheese
  • Sour Cream 
  • Pico de Gallo or Salsa
  • Anything else you want!
Directions:

Place tortilla in heated skillet. Evenly sprinkle cheese over the top of flour tortillas; place scrambled eggs on top of cheese on tortilla. Evenly distribute the cooked meat over the eggs. Allow cheese to melt.

Place second flour tortilla with melted cheese on top. Remove from skillet; cut into wedges. Serve with guacamole, sour cream, salsa, or pico. Refrigerate leftovers!

*For a healthier quesadilla, you may substitute whole wheat or whole grain tortillas, egg whites or Egg Beaters, turkey bacon, low-fat cheese, and lots of veggies! : )
