Baked Eggs in Avocado

Avocado. What a beautiful, versatile, wonderful fruit! It makes for a very happy chef indeed : ) I love them in guacamole, on sandwiches, and on their own with a little salt and pepper, but, I was curious about the baked eggs in avocados recipe I've seen floating around Pinterest and other places, so today, I decided to give it a try.
I made this once before, but my avocado wasn't ripe enough, so sadly, that time was a FAIL.The avocado was thick, rubbery, and hard to eat--it just didn't taste good.
Fortunately, my avocado was beautifully ripe this time, so I had much more success. You can spread your avocado on some whole grain toast or eat it on its own. I've also seen people add bacon! I didn't have any today, but would likely add it next time.

Ingredients:
  • 2 eggs
  • 1 avocado
  • salt and pepper to taste
Directions:

Preheat oven to 400 and put foil into a small oven-safe baking dish or sheet. Cut avocado in half and remove the pit. With a spoon, remove some of the avocado flesh to make room for the eggs. Slice a bit off the back of the avocado so it will be level on the baking surface.

Crack eggs into the center of the avocado; add salt and pepper to taste. Bake for 15-20 minutes or until egg is done.
