Pulled Pork Tacos with Fresh Cherry Salsa

I love pulled pork! Done right, the meat is moist, flavorful, and absolutely delicious--and it's so versatile! It goes with everything. I had some leftover from a cookout this weekend, and found this recipe for pulled pork tacos with cherry salsa.
It looked so fresh and delicious, I couldn't resist, especially when I found some pretty little yellow tomatoes at the store recently, AND found cherries on sale at Sprouts! What I love about this recipe is that if you already have your meat prepared (mine was leftovers!), all you have to do is put the salsa together and top your tacos! SUPER, super easy--and the flavors are wonderful.
You can substitute shredded chicken or a flaky, flavorful fish for the pork, and can easily use strawberries, peaches, or another summery fruit in the salsa. I shared this with my sister, who ate it straight from the bowl by the spoonful!

Ingredients:

For the salsa:
  • 1 cup tomatoes, chopped and seeded (about 1/2 lb)
  • 1 cup chopped cherries (about 1/2 lb)
  • 1/4 cup chopped red onion
  • Small handful of cilantro, chopped
  • Juice of 1/2 lime
  • 1 jalapeno, chopped
  • Salt
  • Pepper
For serving:
  • Leftover pulled pork
  • Tortillas
  • Crumbled Queso Fresco 
Directions:

Toss the salsa ingredients in a medium bowl until well mixed. Salt & pepper to taste and then set aside. To assemble, pile pulled pork on tortillas, topped with a generous scoop of salsa and crumbled queso fresco.
